The hairy crab is known as a Shanghainese delicacy first and foremost. This crab roe menu at Jade Garden features the premium hairy crabs from Taihu Lake, mid way between the southern part of Jiangsu province and northern part of Zhejiang province near Shanghai. Taihu Lake is the third largest freshwater lake in China, with continuous water supply, stable quality and high nutrition. Taihu Lake crabs are famed for their creamy and sweet roe as well as the meat quality. Jade Garden especially selects crabs weighed between 3 tael to 4 tael (90 g and 120 g), which are about half the size of an adult palm, for making Shanghainese the crab roe dishes.
