A culinary veteran with over 22 years of experience worldwide, Flaxman brings a breadth of knowledge, expertise, and innovations to the boutique resort’s bespoke dining experience.

Chef Flaxman has worked closely with the resort team to create a food and beverage program that is extremely personalized, accommodating, and simply exquisite. Each morning, setting the tone for a lavish, bespoke experience, Sireeampan offers its signature Anytime, Anywhere Breakfast. Guests can select from fresh bread and pastries, seasonal fruits, savory delights and the finest selection of teas and coffees. Delivered in a luxury wicker hamper basket, breakfast can be brought to them at anytime, anywhere they’d like in the resort.
Other dining experiences, envisioned and executed by Chef Flaxman, include Sayomporn Dining Room that offers regional and international cuisine, a delicious marriage between global and local Siamese flavors, and as inspired by the name of the restaurant. Guests can also unwind and socialize at Sip Piano Lounge and Wine Cellar that offers a whimsical, yet approachable menu created by Chef Flaxman.
A South African by birth, Chef Flaxman has rich experience in the culinary world and was once private chef for celebrities, Heads of State, politicians and numerous well-known musicians. Growing up within a family in the restaurant business, Flaxman was exposed to the art of cooking at just five years of age, developing an early passion and talent for the culinary arts. After graduating with a degree in hotel management and catering from Hotel Career Center in Bournemouth, England, Flaxman quickly launched into his reputable chef career in Europe, first launching his own catering company, then expanding into notable restaurants and hotels around the world.
In 2004, Flaxman landed in Thailand, a land he now calls home. After serving as executive chef of Watermark Restaurant in Phuket for four years, he moved to Singapore where he served as an instructor for Sodexo, teaching young chefs health and safety tips in the kitchen, as well as how Western techniques can be applied to Asian cuisine. Flaxman next took his career to the Maldives serving as a private chef before returning to Thailand in 2012. Prior to joining Sireeampan, Flaxman was executive chef and food and beverage manager of Glow Elixir in Koh Yao Yai, Thailand.
