Discovering fine French cuisine with Chefs present on board
At the end of November, Air France launched the start of the holiday season by offering new?gourmet delights which will continue throughout 2014.
Once a week, a Chef from Servair, an Air France subsidiary and leader in airline catering, boards a long-haul Air France flight flight and welcomes La Premi?re and Business customers. During?the flight, the Chef introduces them to the ? la carte menus, including those by the talented young Chef Thibaut Ruggeri, winner of the Bocuse d?Or 2013, who has been designing exclusive new dishes in the Business class cabin for the past few months. When new menus are added in Economy and Premium Economy, the Chef presents them to passengers.?
The Servair Chef meets passengers, finds out what they think of the dishes and explains how the com-pany adapts to the constraints of airline catering on a daily basis, to preserve the original spirit and flavour of the dishes on board. In addition, he passes on his expertise and?know-how to the crew, to ensure dishes are presented in an optimum way and to constantly ensure service excellence.?
